         Easy Rice Khichdi

Rice Khichdi is the easiest and quickest recipe for breakfast which i usually prepare. A nutritious and tasty breakfast too.

This is similar to Huggi/Khara Pongal except here we use onions and tomatoes, so khichdi gives a different taste than Huggi/Khara Pongal. 

Ingredients:

Rice: 3/4 cup

Moong Dal: 1/4 cup

Jeera: 1 tsp

Pepper corns: 6 - 7

Green Chillies: 2 - 3

Cashews: 6 - 7

Curry Leaves: 1 Strand

Chopped Onion - 2 cups

Chopped Tomatoes - 1 cup

Salt to taste

Ghee/Oil: 1 tbsp

Grated coconut: 2 tbsp grated (optional)

Turmeric: 1 tsp

Water: 2 cups

Procedure:

1. Crush Pepper and Jeera roughly till pepper breaks down into 2 pieces.

2. Heat ghee in pressure pan, add mustard seeds , when it starts spluttering add chopped onions, tomatoes, curry leaves, pepper jeera crushed powder, turmeric, cashews, green chillies and fry for a minute.

3. Add washed rice, moong dal, water, salt and grated coconut. Mix well.

4. Close the pressure cooker and cook till done.

 Your Rice Khichdi is ready in minutes. Serve hot.....
