Palak or spinach rice is very tasty, healthy dish and ideal for lunch box. Delicious Palak rice is prepared using rice, spinach, onion and tomatoes. It can also be prepared using leftover rice.
Rice: 1 cup
Tomato: 1 chopped finely
Onion: 1 chopped finely
Spinach: 3 cups chopped finely
Rasam powder: 2 tbsp
Mustard Seeds: 1 tsp
Turmeric: 1 tsp
Ginger Garlic paste: 1 tsp
Oil: 2 tbsp
Coriander Leaves: a handful
Sugar: 2 tsp
Lime juice: 2 tsp
Salt to taste
1. Pressure cook rice with 1:2 water (to ensure each rice grain is separate) and allow it to cool.
2. Heat oil in kadai, add mustard seeds on spluttering add onion. Fry till it turns transparent. Add tomatoes, ginger garlic paste and turmeric. Fry for few minutes.
3. Add rasam powder, salt and sugar. Fry for a minute. Add chopped Palak/spinach leaves. Fry for 5 minutes. Switch off the flame.
4. Add cooked rice. Mix well. Add lime juice. Garnish with coriander leaves.
Serve Palak/Spinach rice is ready with curds or pickle.
