Soppu Molake Hesarukalu Huli/Sprouted Greengram Greens Sambar is a very popular South Indian curry. Greens Sambar goes well with rice and also ragi balls.

Health Benefits:
Greens are a rich source of potassium and magnesium. Potassium helps regulate blood pressure, and magnesium regulates blood sugar. Greens are low in calories, have no cholesterol, and are fat-free, and as such a must for any weight loss plan. A diet rich in green leafy vegetables coupled with physical exercise, whether yoga or something else, is great for your health.
soppu green gram huli

Ingredients:

Sprouted Green Gram/Molake Hesarukalu : 1 Cup

Spinach/Palak : 1 bunch

Methi Leaves: 1 bunch

Amaranthus leaves/Dantina soppu - 1 bunch

Tomato - 1

Onion - 1 medium sized chopped

Curry Leaves - 2 strands

Oil - 1 tbsp

Mustard Seeds - 1 tsp

Turmeric - 1 tsp

Asafoetida 

Grated Coconut - 2 tbsp

Sambar Powder - 2 tbsp 

Salt to taste

Procedure:

1. Grind  onion, tomato, coconut and sambar powder to a fine paste.

2. Heat oil in a pressure cooker, add mustard seeds and on spluttering add curry leaves, asafoetida, sprouted greengram, chopped greens and mix well. Fry for a min.

3. Add  paste from step 1 and mix well. Pour 2 cups of water. Add salt to taste.

4. Close the lid of the cooker and pressure cook for 3 whistles.

Your delicious Sambar is ready to eat with rice or ragi balls.
