Pineapple gojju/sabzi is a sweet and sour dish prepared commonly in South Indian weddings. Pineapple gojju is of course my kids favorite dish.
Pineapple Gojju is very easy to prepare and very delicious too.

Pineapple: 1 cup cut into small cubes
Powdered Jaggery : 1-1/2 tbsp
Tamarind juice : 1-1/4 tbsp
Gojju powder : 2 -1/2 tbsp
Grated coconut : 1 tbsp
Salt to taste
Oil: 1 tbsp
Asafoetida - Pinch
Mustard Seeds - 1 tsp
Turmeric - 1 tsp
Curry Leaves - 1 strand
1. Heat the Oil in a pan, add Mustard seeds, once it splutters, add turmeric, asafoetida, Curry leaves.
2. Put Pineapple pieces,sprinkle salt and little water and close the lid. Make sure it is in low flame for 5 - 8 mins.
3. Grind grated coconut with Gojju powder to a fine paste, add this masala paste and mix well.
4. Then put tamarind juice, jaggery, salt to taste. Add little water and mix well. Let it boil for 5 mins.
Your Pineapple Gojju is ready to serve with rice or chapathi.
Note: If you are running short of time just put this gojju powder,salt, tamarind juice and jaggery to the fried veggie, boil it for 5 mins. Your Gojju is ready in minutes.
