Vegetable Fried rice is an easy to make simple rice recipe with a variety of vegetables. A perfect dish for kids lunch box. Here is a quick recipe for Veg Fried rice.
Rice : 1 cup
Beans : 1/4 cup finely chopped
Carrot : 1/4 cup finely chopped
Cabbage : 1 cup finely chopped
Capsicum :1/4 cup finely chopped
Spring onion greens : 2 1/2 tbsp finely chopped
Garlic : 1 1/2 tbsp
Ginger : 1 inch piece
Oil : 2 1/2 tbsp
Vinegar : 1 tsp
Soya sauce :2-3 tsp
Salt: To taste
Pepper powder : To taste
1. Cook rice by adding 1 3/4 cup of water and a tsp of oil. Later spread it on a plate and allow it to cool. Basically cooked rice grains should be seperate.
2. Heat oil in a pan, add ginger garlic saute for few seconds.Then add beans fry for few seconds.Add carrot, capsicum, cabbage and spring onions. Fry for a minute.
Saute all these vegetables on a high flame.Continuous stirring is very important and veggies should be fully cooked.
4. Add rice and mix well.
5. Add salt, soya sauce, vinegar , salt and pepper. Mix well and switch off the flame.
Serve hot veg fried rice with gobi manchurian.
