         Corn Carrot Soup and Cutlet

Corn Carrot Soup is a very healthy, delicious and easy to make. A bowl of Corn carrot soup is quiet stomach filling and you can even skip your dinner. From the filtered corn carrot paste you can prepare the cutlet.

I learnt this recipe through a TV show. Try this delicious soup and cutlet ..

Ingredients:

Corn: 1 cup
Carrot: 3/4 cup
Onion: 3/4 cup
Coriander seeds: 1 tsp
Cinnamon: small stick
Pepper corns: 4/5
Cloves: 2
Butter: 1 tbsp
Milk: 1 tbsp
Jeera: 1 tsp
Pulao/Pulav leaves or Tej Patta or Bay Leaves - 1 small sized
Coriander Leaves: To Garnish

Procedure:

1. Pressure cook corn, carrot, onion for 3 whistles.

2. Heat the griddle/kadai, add butter,  jeera, coriander seeds, pepper, bay leaves, cloves,  cinnamon and turmeric. Saute for a while.

3. Add the cooked corn, carrot and onion. Fry for a while.

4. On cooling down grind the above to a very fine paste. Add 2 cups of water and mix well. Now pass this through a sieve. Use the filtered mixture for soup and the residue for cutlet.

5. Transfer the filtered mixture to a vessel and bring it to boil. Add milk, sugar to taste, salt to taste and simmer for 10 mins.

6. Garnish with coriander leaves, add drops of lemon juice and serve hot delicious soup.

Corn Carrot Filtered Residue Cutlet

Procedure:

1. Add boiled mashed potatoes for the filtered corn carrot residue.

2. You can also add chopped spinach  to this. Add  1 tbsp rice flour, salt to taste , 1 tsp chilli powder and squeeze some lemon juice.

3. Make small patties, dust it with bread crumbs or medium rava.

4. Place a griddle on the flame.  On heating simmer  the flame and place the dusted patties add oil and cook on medium flame till the bottom turns light brown. Flip and fry the other side by adding cooking oil on the sides of  it. Fry till it turns light brown.  Enjoy with Tomato sauce.
