This is a traditional karnataka style Sambar powder/Huli Pudi. You can prepare this powder and store it in air tight jars for long period.
Menasinakayi/Red chillies - 2 cups (1 cup Bedagi+1 cup Guntur variety )
Kottambari Beeja/Coriander seeds - 1 cup
Fenugreek seeds - 2 spoon
Uddinabele/Urad dhal - 1/4 cup
Kadalebele/Channa dhal - less than 1/4 cup
Peppercorns - 1 spoon
Mustard seeds - 1 spoon
Coconut dry grated - 1 cup
Hing (asafoetida) - 1spoon
Curry leaves - 7-8 strands.Chakke/Cinnamon/dalchin - 4 to 5 pieces
1. Fry all the ingredients with 1 teaspoon of oil separately except asafoetida (hing).
2. Grind it to a coarsely powder.
3. Store in airtight jar.
