         Veg Cutlet Kids Favorite

Add vegetables to your families diet by preparing Veg Cutlet with Beetroot and Carrot. We add as many as vegetables as possible and make it very delicious. This is one of kids favorite dishes for parties.

Grated carrot - 1

Grated Beetroot  - 1/2

Beans, Peas, knol knol, cabbage - altogether chopped to 1 cup

Potatoes - 3 big sized

chillies - 2 finely chopped

ginger - 1/2 inch finely chopped

Peas, Corn  - 1/4 cup for boiling

Onion - 2 finely chopped

Capsicum - 1 finely chopped

Mustard seeds - 1 tsp

Jeera - 1 tsp

Haldi - 1 tsp

Chilli powder - 1 tsp

Garam masala powder  - 1 tsp

Salt to taste

Lemon juice - 2 teaspoon

Powdered Rusk or bread crumbs or medium sojji - 1 cup

1. Boil potatoes, peas and corn in your pressure cooker. Meanwhile Grind Beans, Peas, knol khol, cabbage. just add very little water for grinding. Add as many veggie as possible. This is the best way to feed your family with vegetables.

2. Place a wide thick bottomed bowl on the flame with 5 teaspoons of cooking oil in it.  On heating add mustard seeds.  On sputtering add finely chopped ginger, ginger garlic paste, cumin seeds, turmeric powder, chilli powder & garam masala powder to it.

3. Add chopped onion and fry till transparent. Add capsicum and fry for 2 mins. Then add grated veggies and fry again 5 mins. Till water content evaporates.

4. Add grated carrot and grated beetroot. Fry for 2 more mins.

5. Finally add mashed potatoes and peas. Add salt to taste. Add rusk powder or bread crumbs. Add lime juice and grated coriander.  Allow the mixture to cool.  Make vegetable Patties of required shape as shown in the image below.

6. Dust the vegetable patties with rusk powder or bread crumbs or medium sojji.

7. Place a griddle on the flame.  On heating simmer  the flame and place the dusted patties add oil and cook on medium flame till the bottom turns light brown. Flip and fry the other side by adding cooking oil on the sides of  it. Fry till it turns light brown.  Enjoy with Tomato sauce.

Serve hot veggie cutlets to your kids, then will enjoy this dish.
