I have already posted Veg cutlet, Aloo Palak Cutlet, Oats Cutlet. But here is an interesting cutlet from leftover rice.
I always try to add in lot of veggies to the cutlet and this is the best way to feed your kids with vegetables. But I had a cup of leftover rice which i had prepared in the afternoon which was getting wasted. So i thought of adding rice to the cutlet and prepared the cutlet with it. Rice vegetable cutlet taste was very good. End of my day i was very happy that i could use the veggies and also left over rice.

Grated Carrot - 3/4 cup
Grated Beetroot - 3/4 cup
Rice - 1 cup
Palak/Spinach - 1 cup
Onion - 1 cup chopped finely
Mixed vegetables - 1 big cup (Beans,Capsicum,Cabbage,Peas)
Potatoes - 2
Ginger - 1/2 inch chopped finely
Jeera - 1 tsp
Haldi - 1 tsp
Chilli powder - 1 tsp
Garam masala powder - 1 tsp
Salt to taste
Coriander Leaves - Chopped finely a handful
Green chillies - 2 chopped finely
Mustard seeds - 1/2 tsp
Ginger garlic paste - 1 tsp (optional)
1. Boil potatoes, mixed vegetables in your pressure cooker.
2. Place a wide thick bottomed bowl on the flame with 5 teaspoons of
cooking oil in it. On heating add mustard seeds. On sputtering add
finely chopped ginger, ginger garlic paste, cumin seeds, turmeric powder, chilli
powder & garam masala powder to it.
3. Add chopped onion and
fry till transparent.
4. Add spinach, grated carrot and grated beetroot. Fry for 5 mins.
Finally add mashed potatoes, mashed rice and boiled vegetables. Add salt to taste. Allow the
mixture to cool. Make vegetable Patties of required shape as shown in
the image below.
6. Dust the vegetable patties with rusk powder or bread crumbs or medium rava/sujji.
7. Place a griddle on the flame. On heating simmer the flame and place the dusted patties add oil and cook
on medium flame till the bottom turns light brown. Flip and fry the
other side by adding cooking oil on the sides of it. Fry till it turns
light brown. Enjoy with Tomato sauce.
Serve hot veggie cutlets to your kids, then will enjoy this dish.
