         Eggless Chocolate Walnut Cake

Eggless Chocolate Walnut cake is very easy to prepare and taste great. You can prepare this from maide/all purpose flour, curds and oil. No need of egg and butter.

First cake recipe i prepared from my newly bought oven and i got this recipe from divya's cookbook, she has a good collection of recipes. My kids love cakes especially chocolate cake and finally when the cake was baked it got disappeared in seconds. Try this excellent walnut cake recipe...

All Purpose Flour - 1 cup
Cocoa powder - 1/2 cup
Instant coffee powder - 1 tsp
Curds - 1 cup
Sugar - 3/4 cup
Baking powder - 1 1/4 tsp
Baking soda - 1/2 tsp
Oil - 1/2 cup
Vanilla Essence - 1 tsp
Chopped Walnuts - 1/2 cup
Chocolate chips - 2 tbsp (Optional)

 1. Preheat oven to 200C. Grease your cake tin. Sift together flour, cocoa powder and coffee powder. Keep it aside.

In a mixing bowl, beat together sugar and curds till creamy. Mix in baking powder, baking soda and beat well. Let it rest for 2 -3 minutes or till bubbles start to appear on top.

Add in the oil. Add the flour mix and beat till you get a smooth batter. Beat in one direction. Pour the batter into the prepared tin.

Sprinkle the top with chopped walnuts and chocolate chips. Bake at 200C for 5 minutes and 170C for 30-35 minutes or until a toothpick inserted in the center comes out clean.

5. Cool the cake in the tin for 5 minutes and then turn onto a wire rack for further cooling.

Cool the cake completely before cutting for best results. But my kids were impatient and I had to cut it when warm only.

Enjoy your delicious walnut cake with ice cream.
